Spagetti and Meat balls

preheat oven to 400 degree F.

Meat balls:
ground Beef : 1/2 pound
garlic - 2 cloves
ginger - 1 cm
parsely - 2 tsp
onion - 1/4 cup. chopped in small square pieces.
cumin - 1 tsp
chilli flakes - 1 tsp
egg - 1
salt
pepper

mix all of the above ingredients well and make small balls. roll them in bread crumbs.
place in a baking pan and cook at 400 degree F for 20-25 mins.. the meat balls should look golden brown and should be cooked through.

mix with your favourite spagetti and marinara sauce and enjoy.

Grilled Salmon salad

Salmon to be marinated with chilly powder, ginger garlic paste, turmeric, salt,lemon and grilled. add pepper to the salmon when its ready.

for salad:
lettuce, tomato, carrots, cucumber, olives, toasted almonds, feta greek dressing, dijorn mustard. toss and add salmon piece to it and enjoy.

shrimp pasta salad

To prepare shrimp:
shrimp - 1 cup
kodam puli.. - 1 large piece -- you can use lemon instead
garlic - 2 cloves.
ginger - 1 cm piece
water - 2 cups
curry leaves
salt
chilly powder - 1/2 tsp
turmeric - 1/4 tsp
cook all of the above over stove top till the water dries.

pesto sauce for pasta:
cashew nuts - 8
oregano - 1 tsp
parsley dried: 4 tsp
parmesan cheese - 2 tsp
fresh basil - 6 leaves
onion - 1 small onion or shallot
olive oil - 1/4 cup
grind all of above except olive oil. heat olive oil and add the grinded mixture till smell of pesto comes.. mix cooked pasta to this.

salad:
lettuce
cucumber
carrots
shrimp prepared as above
pasta prepared as above
greek feta dressing
dijorn mustard - 1/2 tsp
olive.

toss them all together and enjoy :)

Chicken Salad

To prepare chicken:
Chicken breast : 1 split into 2
Chilly powder: 3/4 table spoon
Vinegar : 1/2 cup
Oil: 1/4 cup
Salt : as required :)
water - to the level to reach the top of the chicken..
preheat the oven to 350 degree
mix all of the above in a baking pan and place in baking pan for 20-25 mins.

for salad
chicken prepared above cut to strips. add pepper to this
lettuce
cucumber
carrot
olives
toasted almonds.. to toast use a pan over the stove.
Feta cheese greek dressing
dijorn mustard

mix all of the above and enjoy the salad :)

note: variation can be made by sauteing the chicken with some onion.

Pineapple Payasam

Pineapple Ripe: 1 no
Sugar: 300 gm
Coconut Milk: 3 cup
ghee: 25 gm
raisins: 30 gm
Coconut sliced: 30 gm
cashewnut : 30 gm
Jeera pd: 1t
dried ginger: 1t
cardamom: 4nos
chowari: 50 gm.

1. Boil Pineapple along with little water.
2. when cooked add ghee and fry well.
3. add sugar and fry. no crumps or lumps.
4. 3rd extract of milk
5. when starts to boil add chowari
6. add second and first extract of milk.
7. add nuts and resin
8. remove from flame
9. add spices.

Pumpkin Bars

2c flour
2t baking soda
1/2t salt
2t cinnamon
2c sugar
4 eggs
2c pumpkin
1c oil.

Mix dry ingredients
add slightly beaten eggs, pumpkin and oil.
mix all together
bake at 350 for 25 min.

Frosting:
3 or 4 oz cream cheese at room temp
3/4 stick butter room temp
1t milk
1t vanilla
1 3/4c powdered sugar

mix and frost.

Banana: Nutmeg 1t, Cinnamon 1t
strawberry: lemon zest, vanilla
grape: cinammon 1t, vanilla.
pineapple: brown sugar instead of normal. no spices. only vanilla.

Pathiri

Rice flour - 1.5 cup
Water - 2 cup
Salt - as req
Oil - 1 tsp.
Coconut milk - 1 tsp.
  1. Boil water along with salt and oil
  2. When it boils, lower flame to minimum
  3. add flour to water - constant stirring required.
  4. keep stirring to make smooth and soft dough
  5. remove from flame when the color starts to change and dough is soft
  6. add coconut milk
  7. go ahead making small balls and rolling it.
