Pineapple Payasam

Pineapple Ripe: 1 no
Sugar: 300 gm
Coconut Milk: 3 cup
ghee: 25 gm
raisins: 30 gm
Coconut sliced: 30 gm
cashewnut : 30 gm
Jeera pd: 1t
dried ginger: 1t
cardamom: 4nos
chowari: 50 gm.

1. Boil Pineapple along with little water.
2. when cooked add ghee and fry well.
3. add sugar and fry. no crumps or lumps.
4. 3rd extract of milk
5. when starts to boil add chowari
6. add second and first extract of milk.
7. add nuts and resin
8. remove from flame
9. add spices.

Pumpkin Bars

2c flour
2t baking soda
1/2t salt
2t cinnamon
2c sugar
4 eggs
2c pumpkin
1c oil.

Mix dry ingredients
add slightly beaten eggs, pumpkin and oil.
mix all together
bake at 350 for 25 min.

Frosting:
3 or 4 oz cream cheese at room temp
3/4 stick butter room temp
1t milk
1t vanilla
1 3/4c powdered sugar

mix and frost.

Banana: Nutmeg 1t, Cinnamon 1t
strawberry: lemon zest, vanilla
grape: cinammon 1t, vanilla.
pineapple: brown sugar instead of normal. no spices. only vanilla.

Pathiri

Rice flour - 1.5 cup
Water - 2 cup
Salt - as req
Oil - 1 tsp.
Coconut milk - 1 tsp.
  1. Boil water along with salt and oil
  2. When it boils, lower flame to minimum
  3. add flour to water - constant stirring required.
  4. keep stirring to make smooth and soft dough
  5. remove from flame when the color starts to change and dough is soft
  6. add coconut milk
  7. go ahead making small balls and rolling it.
